"In 1994, a French winemaker accepted a unique challenge: Vincent
Desplat was invited to join Bali's first and only true winery.
The goal was to produce an all-Balinese wine from locally grown
and harvested grapes. Although grapes had been cultivated in
the hot and arid northern coastal region of the island for several
decades, the art of winemaking had not been explored. Hatten
Wines, the new Balinese-owned company, with Vincent at the helm,

harvest of the grapes, the sub-equatorial climate of Bali ensures
that the evergreen vines yield a new crop up to 2.5 times per
